9 small eggs
¼ cup almond milk
2 cups chopped spinach, thawed and dried from excess water
½ cup low-fat Cheddar cheese, shredded
¼ cup cooked ham, diced

HOW TO MAKE

Preheat oven to 300°F (150°C). Lightly coat a small-sized baking sheet with cooking spray with 4 quick sprays. In a medium bowl, whisk eggs and almond milk. Pour the mixture over the baking sheet and cover with spinach, Cheddar cheese and ham. Bake about 20 minutes or until just set. Remove from the oven, let cool and cut into small squares.
