2     cups low-fat Greek yogurt, vanilla or plain
1      tablespoon honey
1 1/2 fresh strawberries
1/4   unsweetened shredded coconut

HOW TO MAKE IT

1 In a medium bowl, combine the yogurt and honey until mixed well. Add 2 cups of the raspberries to the mixture. If you want the yogurt to be raspberry-flavored, add it to a blender and mix.
2 Line a low freezer-proof dish or baking tray with cling wrap. Pour the mixture evenly over the dish using a spoon. Sprinkle remaining 1/2 cup of raspberries over the top of the mixture.
3 Cover the mixture with cling wrap and put in the freezer for at least 6 hours, or overnight.
4 Break into large bark pieces and serve immediately.
